Option 2: Bulk Shares (Quarter, Half, or Whole Cow)
Bulk shares are for customers who want to purchase a larger quantity of beef and, in some cases, customize how their animal is cut.
This process is more involved than purchasing a beef box, but it allows you to fill your freezer and choose many of the cuts you receive.
Share Sizes
Quarter Cow — The Baron Box
Approximately 100 pounds of beef.
This option is pre-selected and packaged similarly to our beef boxes.
Because the quarter share is pre-packed, no cut sheet is required.
Half Cow Share
Approximately 200-350 pounds of beef.
Customers purchasing a half cow will receive a cut sheet, allowing them to select and tailor their preferred cuts.
Whole Cow Share
Approximately 400-700 pounds of beef.
Whole cow customers will also receive a cut sheet and have the most flexibility when selecting cuts.
The Bulk Share Process
Step 1: Reserve Your Share
Bulk shares require a deposit to reserve your animal.
Once your deposit is received, your share is secured for the upcoming processing date. Processing date could be up to 2 months.
Step 2: Receive Your Cut Sheet
Customers purchasing half or whole shares will receive a cut sheet prior to processing.
This allows you to select options such as:
• Steak thickness
• Roast sizes
• Steak vs roast preferences
• Ground beef packaging
• Bones, organ, offal and fat requests
Quarter shares (Baron Boxes) are pre-selected and do not require a cut sheet.
Step 3: Processing
Your animal will be processed at a USDA-inspected facility and then professionally cut, vacuum sealed, and frozen.
Processing timelines vary depending on finishing method and scheduling.
Step 4: Final Payment
For half and whole shares, the final balance will be calculated once the beef is processed and the final yield weight is determined.
Your deposit will be applied to the total. Payment will be completed prior to delivery or pickup.
Step 5: Pickup or Delivery
Once your beef is ready, Lauren will contact you to arrange delivery or pickup. If you live within in hour of Catheys Valley delivery is free (think of this as the area between Clovis and Modesto). If you're in Southern California, we are able to serve you via drop off locations between Santa Clarita and Irwindale, following the 210 east.
